Breakfast:

Our favorite breakfast consists of scrambled eggs & turkey bacon. I fry the bacon first & keep it warm near the campfire, then fry the eggs (fresh only -- I had enough powdered eggs in the Army) with cheese, spices & dried tomatoes. Toast the tortillas on the grill & garnish with packets of Taco Bell hot sauce.

Other breakfast ideas include:

  • Breakfast burritos
  • Instant oatmeal, Cream of Wheat, etc. -- lightweight & easy to make (throw in a handful of raisins, nuts, or dried fruit)
  • Pancakes -- dry mix
  • Hashbrowns -- dehydrated (we fry w/cheese & spices)
  • Dried sausage
  • Bagels or English muffins -- toasted on the grill
  • Granola or granola bar
  • Pop Tarts
  • Dried fruit (apples, raisins, apricots, etc.)
  • Hot chocolate
  • Coffee, tea
  • Instant hot cider

    Lunch:

    Lunch usually consists of snacking (see snacks). Tuna is good (mix w/packets of mayo & mustard) & put on bagels or crackers.

    Other lunch ideas include:

  • Instant soups -- lightweight & easy to make
  • Fruit
  • Hot dogs
  • Top Raman noodles
  • Gorp, trail mix
  • Cheese
  • Jerky
  • Smoked fish
  • Canned fish -- tuna, sardines, salmon
  • Salami, pepperoni
  • Crackers

    Dinner:

    Our favorite dinner is pasta. We buy 14oz packages of 3-flavor pasta at Costco. Put water in pot, pour in pasta. While water is getting hot, I mix in a roll of dehydrated spaghetti sauce, spices, cheese, & sometimes hot dogs. Feeds 3 hungry people.

    On short hikes we'll bite the bullet & take in steaks (grilled over the fire), corn on the cob (wrapped in foil & cooked in the coals), a veggie, & dehydrated potatoes (fried). Mmmmmm -- GOOD!!

    Almost always we'll have trout to grill but you can't count on it. Ain't nothing like fresh trout cooked over the open fire & eaten with your bare hands to get you back in tune with your primitive roots.

    Snacks:

    The best investment we made is buying a dehydrator. We make our own jerky (delicious), dried fruit (apples, apricots, pineapple, etc.) & veggies (tomatoes are great), fruit leather (strawberry/kiwi), & dried pasta sauce.

    Carla is a chocoholic so we pack in a chunk of chocolate (bought in bulk) & marshmallows (roasted over the fire). Additionally, we usually take instant Gatorade just to give a little variety from plain water.
