Breakfast Recipes

Breakfast Burritos

6 eggs
1/2 lb turkey bacon
a hunk of cheese
3 tortillas
spices
dried tomatoes
2 tsp powdered milk
a little water
3 packets of Taco Bell hot sauce

Fry bacon & set aside (near the campfire).

In a bowl or pot scramble eggs, powdered milk, & little water & pour into frying pan. Add cheese (broken in small pieces), spices & tomatoes & fry until done.

While eggs are frying, toast tortillas over campfire. Put eggs & bacon in tortillas & smother with hot sauce.

Feeds 3 adults.

Eggs Benedict (Bill Seibert)

4 eggs
4 slices Canadian bacon
enough Biscuit mix for 4 biscuits
3 tbs.butter or margarine
spices

This is to be prepared by the male member of a couple.  Start by getting up early without disturbing the other member of the couple.  Make coffee, then make the buscuits and sit them to one side.  Drink coffee while buscuits are cooking.   Fry up the canadian bacon, and set on top of the buscuits.  Fry the eggs next, and put them on top of the bacon.  Put about 3 tablespoons of butter or margarine in the fry pan and melt it.  Then put in about 3 tablespoons of the extra buscuit mix and add about 3 tablespoons of water.  Add in some spices, I like to put in some fines herbes, a tad of cayenne, and a fair amount of salt.  Stir like hell, and pour over the pile of biscuit, bacon and egg. 

Serve it  to the sleeping partner with a nice cup of coffee. I feel it only fair to warn you that this can lead to the type activity that can seriously delay an early departure for the trail.

Dinner Recipes:

Primo Pasta

14 oz pasta (spinach & tomato is our favorite)
1 jar spaghetti sauce (dehydrated into a leather roll)
spices (salt, pepper, garlic, oregano, etc.)
dried tomatoes
hunk of cheese (optional) broken into pieces

Pour all ingredients in pot & add enough water to cover them. Boil slowly until pasta is done. Stir occassionally. We add a hot dog or two sometimes.

Feeds 3 adults.

Jim's Rice Delight

1 cup instant rice
1 cup boiling water
1/2 oninion
1/2 bell pepper
1 clove garlic
dried tomatoes
spices
a little oil
a dash of Yoshida Gourmet Sauce

Boil water, add rice & tomatoes. Stir, cover, & set aside.

While water is boiling, dice onion, pepper, & garlic.

While rice is steeping, saute veggies in a dab of oil.

Add veggies to rice, spice to taste and enjoy. Goes great with grilled trout.

Feeds 2 adults.

Sausage & Rice (Bill Seibert)

2 sausages
1 cup minute rice
1 large oninion
1large green pepper
1/2 cup potato flakes
can of beer
spices
a little oil

Saute one large chopped onion and  one large green bell pepper in the bottom of a cooking pot.  Per person to be served, add one 6 to 8 inch section of sausage, cut into bite sized pieces, and about 1 cup of water per person.  Then throw in 1 cup of  minute rice, a half cup of potatoe flakes, and 1/4 can of beer per person.  Traditionally, the cook gets the rest of the beer, but that can be shared.   Boil at a slow boil until the liquid is reduced to an acceptable stew-like thickness.  Individually salt and pepper to taste. 

This is nice, because, with the exception of the onion and bell pepper, everybody carries their own ingredients, and delivers them to the cook.   Makes a very filling dinner, and a happy, satisfied cook...

Snack Recipes

Jerky

I buy about 5 pounds of sliced top sirloin, cut it into strips, marinade overnight in a soy-sesame marinade I get at Costco, and dehydrate for about 24 hours in my dehydrator. Makes great jerky -- tastes like steak.
